In 2014 the Estate equipped itself with a modern and innovative winery.
At the service of our savoir-faire, this competitive tool allows us to work in optimal conditions to produce wines true to the terroir special features.
The grapes, which are from a single variety called Chardonnay, are harvested on a machine at the optimal ripeness.
Pressing is carried out with a pneumatic press at low pressure in order to guarantee a good juice extraction quality.
Settling occurs then at low temperature during 24 hours.
Alcoholic and malolactic fermentations take place in temperature-controlled stainless steel vats, followed by ageing on fine lees for 6 to 12 months depending on the vintage.
2014 is our first year of commercialisation.
